How to Make Vanilla Berry Oat Layer Cake
- Heat a conventional oven to 350°F (180°C). Prepare two lined 6-inch (15 cm) round tins.
- Whisk the oat flour, protein powder, baking powder and salt. In another bowl whisk eggs, yogurt, oil, maple syrup and vanilla. Combine just until even; rest 5 minutes.
- Fold half the berries into the batter. Divide between the tins.
- Bake 22-28 minutes, until a skewer comes out without wet batter and the top springs back. Cool 15 minutes in the tin, then on a rack for at least 1 hour.
- Beat cream cheese, thick yogurt and powdered sugar until smooth. Spread between the cooled layers and on top; decorate with remaining berries.
